Ingredients

  • 3 large eggs
  • 1 cup (240 ml) milk (dairy or unsweetened non-dairy)
  • 2 Tbsp ground flaxseed (flax meal)
  • 2 Tbsp psyllium husk powder

Instructions

  1. Choose a wide-mouth jar or microwave-safe mug (12 oz or larger) and lightly grease the inside with butter or oil.
  2. Crack the eggs into the jar and pour in the milk. Whisk vigorously with a fork until smooth and well combined.
  3. Stir in the flaxseed and psyllium husk powder. Mix thoroughly—within 30 seconds the mixture will begin to thicken.
  4. Microwave on high for 60 seconds. Check the top—if it’s still very jiggly, microwave in extra 10 second bursts (up to 90 seconds total) until the surface is set and springs back when touched.
  5. Let rest 1–2 minutes (it firms up as it cools), run a knife around the edges, then invert onto a plate or slice right in the jar.

  • Savory Style: Stir in a pinch of salt, garlic powder, or mixed herbs before cooking.
  • Cheesy Bread: Mix in 1–2 Tbsp grated Parmesan or cheddar for extra flavor.
