Description
A light and refreshing salad combining sweet strawberries and crunchy cucumbers, topped with feta cheese and a zesty lemon dressing.
Ingredients
Scale
- 2 cups chopped strawberries
- 2 cups chopped cucumbers (Persian or mini for extra crunch)
- 1/2 cup crumbled feta cheese
- 5–10 leaves fresh basil, chopped
- 5–10 leaves fresh mint, chopped
- Salt + pepper, to taste
- 2 Tbsp olive oil (for dressing)
- 1/2 a lemon, juice only (for dressing)
- 1/2 tsp honey (for dressing)
- 1/2 tsp white wine vinegar (or apple cider vinegar) (for dressing)
- 1/4 tsp garlic powder (for dressing)
Instructions
- Add all dressing ingredients to a small bowl or jar. Whisk or shake together to combine. Set aside.
- Add all salad ingredients to a large serving bowl.
- Pour dressing overtop and toss to combine.
- Adjust seasonings to taste and serve immediately!

- *FETA CHEESE: Use a high-quality block of sheep’s feta stored in brine for the best taste.
- *VEGAN OPTION: Swap feta with a plant-based alternative and use maple syrup instead of honey.
