Description

A light and refreshing salad combining sweet strawberries and crunchy cucumbers, topped with feta cheese and a zesty lemon dressing.


Ingredients

Scale
  • 2 cups chopped strawberries
  • 2 cups chopped cucumbers (Persian or mini for extra crunch)
  • 1/2 cup crumbled feta cheese
  • 510 leaves fresh basil, chopped
  • 510 leaves fresh mint, chopped
  • Salt + pepper, to taste
  • 2 Tbsp olive oil (for dressing)
  • 1/2 a lemon, juice only (for dressing)
  • 1/2 tsp honey (for dressing)
  • 1/2 tsp white wine vinegar (or apple cider vinegar) (for dressing)
  • 1/4 tsp garlic powder (for dressing)

Instructions

  1. Add all dressing ingredients to a small bowl or jar. Whisk or shake together to combine. Set aside.
  2. Add all salad ingredients to a large serving bowl.
  3. Pour dressing overtop and toss to combine.
  4. Adjust seasonings to taste and serve immediately!
