Description

A savory and hearty breakfast casserole made with breakfast sausage, hash browns, and a blend of cheeses, perfect for a filling meal.

Ingredients

Scale
  • 1 pound breakfast sausage, casings removed
  • 1 medium onion, finely chopped
  • 1 small red bell pepper, diced
  • 3 cups frozen shredded hash browns, thawed
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Swiss cheese
  • 1.5 cups whole milk
  • 8 large eggs
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon paprika
  • 2 tablespoons chopped fresh parsley, optional for garnish

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish with butter or cooking spray.
  2. Heat a large skillet over medium heat, add sausage, and cook until browned, approximately 6-8 minutes. Drain excess fat.
  3. In the same skillet, sauté chopped onion and diced red bell pepper for 3-4 minutes until softened.
  4. In a large mixing bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and paprika.
  5. Add hash browns, sausage mixture, cheddar cheese, and Swiss cheese to the egg mixture, stirring until combined.
  6. Pour the mixture into the prepared baking dish, spreading it evenly.
  7. Bake for 40-45 minutes until the center is set and the top is golden brown.
  8. Allow to rest for 10 minutes before slicing and garnish with fresh parsley if desired.

Notes

  • Ensure hash browns are thawed to achieve the best texture.
  • This casserole can be prepared in advance and baked in the morning.
