- 1 small red bell pepper, diced
- 3 cups frozen shredded hash browns, thawed
- 2 cups shredded cheddar cheese
- 1 cup shredded Swiss cheese
- 1.5 cups whole milk
- 8 large eggs
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon garlic powder
- 0.25 teaspoon paprika
- 2 tablespoons chopped fresh parsley, optional for garnish
Instructions
- Preheat oven to 350°F and grease a 9×13-inch baking dish with butter or cooking spray.
- Heat a large skillet over medium heat, add sausage, and cook until browned, approximately 6-8 minutes. Drain excess fat.
- In the same skillet, sauté chopped onion and diced red bell pepper for 3-4 minutes until softened.
- In a large mixing bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and paprika.
- Add hash browns, sausage mixture, cheddar cheese, and Swiss cheese to the egg mixture, stirring until combined.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake for 40-45 minutes until the center is set and the top is golden brown.
- Allow to rest for 10 minutes before slicing and garnish with fresh parsley if desired.
