A delicious and sweet breakfast treat combining apple pie filling with warm, crispy quesadillas.

- 4 large flour tortillas
- 2 cups prepared apple pie filling or cooked cinnamon apples, finely chopped
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 4 ounces cream cheese, softened
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
- Powdered sugar, for dusting
- Honey, as desired
- Caramel sauce, as desired
- Whipped cream, as desired
Instructions
- Mix softened cream cheese, powdered sugar, and vanilla extract in a bowl until completely smooth.
- If using, evenly spread a thin layer of the cream cheese mixture over one side of each tortilla.
- Chop apple pie filling or cooked cinnamon apples into small pieces for easy spreading. In a bowl, combine apples with brown sugar, cinnamon, and nutmeg, stirring until evenly mixed.
- Spread the apple mixture evenly onto half of each tortilla. Fold tortillas in half to form half-moon shapes, enclosing the filling.
- Melt butter in a large skillet over medium heat. Place quesadillas in the skillet and cook for 2 to 3 minutes per side, or until both sides are golden brown and crisp.
- Transfer cooked quesadillas to a cutting board, allow to cool slightly, then slice into wedges. Serve warm with a dusting of powdered sugar or desired toppings such as honey, caramel sauce, or whipped cream.
Notes
- For a richer flavor, consider adding chopped nuts or raisins to the apple filling.
