Description

Authentic Pico de Gallo is a fresh and flavorful salsa made with diced tomatoes, onions, jalapenos, cilantro, lime juice, and seasoning. It’s perfect as a dip or condiment.


Ingredients

  • 1 lb Roma tomatoes, diced (34 medium)
  • 1/2 medium white onion, chopped (1 cup) or yellow onion or red onion
  • 1 jalapeno pepper, seeded and finely minced (optional)
  • 1/2 cup cilantro, chopped
  • 2 Tbsp lime juice, from 1 lime
  • 1/2 tsp salt, or to taste
  • 1/8 tsp black pepper

Instructions

  1. In a medium bowl, combine diced tomatoes, onion, jalapeno pepper, and chopped cilantro.
  2. Stir in 2 Tbsp lime juice and lightly season with 1/2 tsp salt and 1/8 tsp black pepper, or season to taste.
  3. Enjoy right away or cover and refrigerate overnight.

Notes

  • For a spicier Pico de Gallo, leave some seeds in the jalapeno.
  • It can be stored in the refrigerator for a day but is best consumed fresh.
