- 1 avocado, diced
- 1 mango, diced
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1/4 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cut the avocado in half lengthwise and twist the two halves apart to remove the pit.
- Scoop the flesh from each half and dice it into small cubes. Place in a mixing bowl.
- Peel the mango and cut it into slices along each side of the pit, then dice the mango into small cubes and add to the bowl.
- Slice the red onion into thin rings and add to the bowl with the avocado and mango.
- Chop the cilantro finely and add to the bowl.
- In a small bowl, combine olive oil and lime juice, then pour over the salad ingredients.
- Sprinkle salt and black pepper over the salad and gently toss all ingredients together.
- Give the salad a final gentle toss to ensure all flavors are well combined. Serve immediately or chill before serving.
