- 8 slices bacon, cut in half
- 1/4 cup brown sugar
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Pat the pineapple chunks dry with a paper towel.
- In a small bowl, mix together the brown sugar and cayenne pepper, if using.
- Wrap each pineapple chunk with a half-slice of bacon. Secure with a toothpick if needed.
- Roll the bacon-wrapped pineapple in the brown sugar mixture.
- Place the bites on the prepared baking sheet.
- Bake for 15-20 minutes, or until the bacon is crispy and the sugar is caramelized.
- Let cool slightly before serving.
