- 4 large eggs
- 200g feta cheese
- 1 tablespoon olive oil
- 1 cup spinach, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Place feta cheese in a small baking dish, and drizzle with olive oil. Bake for 10 minutes, or until the cheese begins to soften.
- Remove the feta from the oven, and gently crack the eggs on top of the cheese.
- Add the chopped spinach and halved cherry tomatoes around the eggs.
- Sprinkle with oregano, salt, and pepper, and return the dish to the oven.
- Bake for another 8-10 minutes or until the eggs are cooked to your liking.
- Garnish with fresh parsley and serve immediately.

- Adjust the baking time for eggs based on your preferred doneness.
