Description

Baked Feta Eggs is a delicious and nutritious breakfast dish featuring baked feta cheese topped with eggs, spinach, and cherry tomatoes.


Ingredients

  • 4 large eggs
  • 200g feta cheese
  • 1 tablespoon olive oil
  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place feta cheese in a small baking dish, and drizzle with olive oil. Bake for 10 minutes, or until the cheese begins to soften.
  3. Remove the feta from the oven, and gently crack the eggs on top of the cheese.
  4. Add the chopped spinach and halved cherry tomatoes around the eggs.
  5. Sprinkle with oregano, salt, and pepper, and return the dish to the oven.
  6. Bake for another 8-10 minutes or until the eggs are cooked to your liking.
  7. Garnish with fresh parsley and serve immediately.
