Description

A creamy and indulgent banana fudge that combines the rich flavors of banana and vanilla for a delightful treat.


Ingredients

  • 2 teaspoons banana flavoring
  • ½ teaspoon yellow food color gel
  • ¾ cup salted sweet cream butter
  • ½ cup half and half
  • ⅓ cup heavy cream
  • 1 teaspoon clear vanilla flavoring
  • 3 cups granulated sugar, plus 2 tablespoons
  • 1¾ cups white baking chips
  • 7 ounces marshmallow fluff
  • 2 tablespoons crushed Nilla wafers, optional garnish

Instructions

  1. Line a 9×9-inch baking dish with parchment paper, ensuring it goes up all four sides. Lightly spray with nonstick cooking spray and set aside.
  2. Add the banana flavoring and yellow food color gel to a small glass bowl and stir to combine. Set aside.
  3. In a heavy-bottomed saucepan, add the butter, half and half, heavy cream, and clear vanilla flavoring over medium heat. Stir continuously until melted.
  4. Add the sugar and stir constantly while bringing the mixture to a simmer, about 6 to 7 minutes. Allow to simmer for another 3 minutes and then remove from heat.
  5. Add the white baking chips, cover the saucepan, and let it rest for 3 to 4 minutes until melted.
  6. Stir in the marshmallow fluff until incorporated.
  7. Add the yellow food gel and banana extract mixture, stirring until the color is uniform.
  8. Spread the banana fudge into the prepared baking dish using a spatula. Sprinkle crushed Nilla wafers on top and cover with aluminum foil.
  9. Let the fudge sit at room temperature for 30 minutes, then chill in the refrigerator for at least four hours.
  10. Once set, lift the fudge out using the parchment paper and cut into 25 pieces. Keep refrigerated until ready to serve.
