Description
A delicious and easy-to-make chicken bake featuring basil pesto, fresh tomatoes, and melted mozzarella cheese.

- 4 boneless, skinless chicken breasts
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup basil pesto
- 2 medium tomatoes, sliced
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (optional)
- 1 tbsp olive oil
- Fresh basil leaves, for garnish
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with olive oil.
- Season chicken breasts with salt and pepper on both sides. Place them in the prepared baking dish.
- Spread 2 tablespoons of basil pesto over each chicken breast.
- Layer tomato slices on top of the pesto.
- Sprinkle mozzarella cheese evenly over the tomatoes. Add Parmesan cheese if using.
- Bake uncovered for 25–30 minutes, or until the chicken is fully cooked (internal temp 165°F) and cheese is melted and bubbly.
- Garnish with fresh basil leaves and serve warm.
Notes
- To check if the chicken is done, use a meat thermometer to ensure it reaches an internal temperature of 165°F.
- This dish pairs well with a side salad or steamed vegetables.
