Description

BBQ Brisket Melts are a delicious sandwich featuring tender brisket, melted cheese, and caramelized onions, all sandwiched between slices of crusty sourdough bread.


Ingredients

  • 1 whole brisket
  • 2 whole onions
  • Sourdough bread
  • Colby jack cheese
  • Provolone cheese
  • BBQ sauce
  • Unsalted butter

Instructions

  1. Trim excess fat from the brisket and apply mustard as a binder. Season generously with your favorite brisket rub.
  2. Refrigerate for 1-2 hours before smoking at 210°F for 9-10 hours until it reaches an internal temperature of 165°F.
  3. Wrap brisket in butcher’s paper with apple cider vinegar and beef tallow, then increase smoker temperature to 250°F until reaching 204°F.
  4. Let brisket rest in a cooler for 2-3 hours.
  5. Sauté diced onions in avocado oil with kosher salt and butter until caramelized.
  6. Assemble your melts by layering fried onions, cheeses, brisket slices, BBQ sauce between slices of sourdough bread.
  7. Toast in a cast iron skillet over medium heat until golden brown on both sides.
