- 2 racks beef or lamb ribs (about 4 lbs)
- 2 tbsp olive oil
- 2 tsp smoked paprika

- 1/2 tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- 1 cup ketchup
- 1/2 cup honey
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp apple cider vinegar
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp chili flakes (optional for heat)
Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with foil.
- Rub ribs with olive oil, paprika, garlic powder, onion powder, cayenne, salt, and pepper. Wrap tightly in foil and place on baking sheet. Bake for 2.5–3 hours until tender.
- While ribs cook, prepare the glaze: in a saucepan, combine ketchup, honey, soy sauce, brown sugar, vinegar, paprika, garlic powder, onion powder, and chili flakes. Simmer 10–15 minutes until thickened.
- Remove ribs from oven, unwrap, and brush generously with glaze. Increase oven temp to 400°F (200°C) or grill on medium-high heat for 10–15 minutes, brushing with more glaze until sticky and caramelized.
- Slice, serve hot, and drizzle with extra glaze.
