Ingredients

  • 2 racks beef or lamb ribs (about 4 lbs)
  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • 1 cup ketchup
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp chili flakes (optional for heat)

Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with foil.
  2. Rub ribs with olive oil, paprika, garlic powder, onion powder, cayenne, salt, and pepper. Wrap tightly in foil and place on baking sheet. Bake for 2.5–3 hours until tender.
  3. While ribs cook, prepare the glaze: in a saucepan, combine ketchup, honey, soy sauce, brown sugar, vinegar, paprika, garlic powder, onion powder, and chili flakes. Simmer 10–15 minutes until thickened.
  4. Remove ribs from oven, unwrap, and brush generously with glaze. Increase oven temp to 400°F (200°C) or grill on medium-high heat for 10–15 minutes, brushing with more glaze until sticky and caramelized.
  5. Slice, serve hot, and drizzle with extra glaze.
