Description

Beef Taquitos are delicious crispy rolled tortillas filled with a savory beef mixture, perfect for a flavorful snack or meal.

Ingredients

Scale
  • 1 pound ground beef or shredded cooked beef (e.g., brisket or roast)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ½ cup tomato sauce or salsa
  • ½ cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 12 small corn tortillas
  • Vegetable oil (for frying) or cooking spray (for baking or air frying)
  • Toothpicks (optional, to secure taquitos)

Instructions

  1. Heat oil in a skillet over medium heat and cook the onion for 3–4 minutes until softened. Add garlic and sauté for 30 seconds.
  2. Add ground or shredded beef. Cook until browned and no longer pink.
  3. Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Toast spices for 1–2 minutes.
  4. Add tomato sauce or salsa, stir, and simmer for 3–5 minutes until thickened. Remove from heat and mix in shredded cheese.
  5. Warm tortillas to make them pliable—either in a skillet or microwave.
  6. Place about 2 tablespoons of filling along the bottom third of each tortilla. Roll tightly and secure with toothpicks.
  7. To Fry: Heat oil to 350°F. Fry seam-side down for 2–3 minutes per side until golden. Drain on paper towels.
  8. To Bake: Preheat oven to 425°F. Place taquitos seam-side down on a baking sheet, spray with oil, and bake for 15–20 minutes, flipping halfway.
  9. To Air Fry: Preheat to 400°F. Spray taquitos lightly with oil and air fry 6–8 minutes, flipping halfway.
  10. Serve hot with toppings of your choice.

Notes

  • To ensure the tortillas don’t break, warm them up before filling.
  • You can customize the filling with other ingredients like beans or veggies.
  • For a healthier option, consider baking or air frying instead of frying.
