Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef tenderloin with salt and pepper, then sear in a hot skillet until browned on all sides.
- Transfer the beef to the oven and roast for about 15-20 minutes, or until desired doneness.
- While the beef is roasting, brush the baguette slices with olive oil and toast them in the oven until golden brown.
- Remove the beef from the oven and let it rest for 10 minutes before slicing thinly.
- Top each toasted baguette slice with a piece of beef, a dollop of Gorgonzola cheese, and a drizzle of balsamic vinegar.
- Garnish with fresh parsley and serve immediately.
