Ingredients

  • 2 tbsp Dijon mustard
  • 1 cup heavy cream
  • 1 tbsp fresh thyme (or rosemary)
  • 4 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Pat the pork tenderloin dry and rub all sides with salt, pepper, and Dijon mustard.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides until golden brown (about 3-4 minutes per side).
  4. Transfer skillet to the oven and roast for 15-20 minutes until the internal temperature reaches 145°F (63°C).
  5. Remove pork and let rest. In the same skillet, sauté minced garlic until fragrant, then add chicken broth, scraping up browned bits.
  6. Stir in heavy cream and remaining Dijon mustard.
  7. Slice rested pork into medallions and serve with sauce drizzled on top.
