- 1.5 lbs pork tenderloin
- 2 tbsp Dijon mustard
- 1 cup heavy cream
- 1 tbsp fresh thyme (or rosemary)
- 4 garlic cloves, minced
- 1 cup low-sodium chicken broth
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Pat the pork tenderloin dry and rub all sides with salt, pepper, and Dijon mustard.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides until golden brown (about 3-4 minutes per side).
- Transfer skillet to the oven and roast for 15-20 minutes until the internal temperature reaches 145°F (63°C).
- Remove pork and let rest. In the same skillet, sauté minced garlic until fragrant, then add chicken broth, scraping up browned bits.
- Stir in heavy cream and remaining Dijon mustard.
- Slice rested pork into medallions and serve with sauce drizzled on top.
Notes
- For added flavor, let the pork marinate with Dijon mustard for at least 30 minutes before cooking.
- Ensure the internal temperature of the pork reaches 145°F (63°C) for the best results.
- This dish pairs well with roasted vegetables or mashed potatoes.
