Description

Birthday Cake Macarons are delightful treats that combine the flavors of a classic birthday cake with the delicate texture of macarons. Perfect for celebrations!


Ingredients

Scale
  • 1 ⅔ cups (200 grams) powdered sugar
  • 1 cup (110 grams) almond flour
  • 3 large (100 grams) egg whites
  • ¼ cup (50 grams) granulated sugar
  • Sprinkles as needed
  • 4 tablespoons (56 grams) unsalted butter softened
  • 3 tablespoons yellow cake mix
  • 1 cup (113 grams) powdered sugar
  • 1 tablespoon heavy cream or milk

Instructions

  1. Line a cookie sheet with a silicone mat or parchment paper.
  2. Using a food processor, pulse the powdered sugar and almond flour until fully combined. Sift into a large bowl.
  3. Prepare the french meringue by beating egg whites on low speed until frothy. Increase speed and gradually add sugar. Beat until stiff peaks form. Add food coloring if desired.
  4. Gently fold the meringue into the dry ingredients until fully combined. The batter should flow like a ribbon.
  5. Transfer the batter to a piping bag and pipe 1-inch disks onto the silicone mat.
  6. Tap the cookie sheet on the countertop a few times to remove air bubbles and pop any with a toothpick.
  7. Sprinkle sprinkles on top if desired.
  8. Rest the macarons for an hour until the tops have dried.
  9. Preheat the oven to 280°F (140°C).
  10. Bake macarons for 15 minutes, rotating the pan halfway.
  11. Cool completely on the cookie sheet before removing.
  12. For the buttercream, beat softened butter until creamy, add cake mix and half powdered sugar until combined, then add remaining powdered sugar and beat for 5-6 minutes.
  13. If too thick, add heavy cream/milk one tablespoon at a time.
  14. Transfer buttercream to a piping bag and pipe frosting between macaron shells to assemble.
