- 2 hearts of romaine, sliced
- 1 cup cherry tomatoes, halved
- 1/4 small red onion (optional)
- 6 strips bacon, chopped
- 1 lb chicken breasts
- 1/2 cup mayonnaise
- 1 tablespoon maple syrup
- 4 teaspoons whole grain mustard
- 1 tablespoon lemon juice
- 1/4 french baguette or other bread
- 2 tablespoons butter
- Salt and pepper, to taste
Instructions
- Prepare the base by distributing romaine lettuce, cherry tomatoes, and red onion evenly on plates.
- Make croutons by melting butter in a skillet, adding bread cubes, and toasting until golden brown.
- Cook bacon in the same skillet until crispy; drain excess fat.
- Season chicken breasts with salt and pepper; cook in the skillet until no longer pink inside. Let rest before slicing.
- Prepare dressing by whisking together mayonnaise, maple syrup, mustard, lemon juice, salt, and pepper.
- Assemble the salad by topping greens with croutons, bacon, sliced chicken, and drizzling with dressing.
