- 1 ½ cups cottage cheese
- 1 tbsp raw honey
- 1 tsp pure vanilla extract
- ⅓ cup blueberry jam
- 4–6 oz fresh blueberries
- ¼ cup granola
Instructions
- Line a baking sheet with parchment paper.
- In a mixing bowl, combine cottage cheese, honey, and vanilla extract until smooth.
- Fold in blueberry jam and fresh blueberries gently.
- Add granola and mix until evenly distributed.
- Spread the mixture onto the prepared baking sheet, about half an inch thick.
- Freeze for at least 4 hours until solid.
- Remove from the freezer and let sit for a few minutes before breaking into pieces.
Notes
- Make sure cottage cheese is well-blended for a smooth texture.
- You can substitute maple syrup for honey if vegan.
- Store leftovers in the freezer for a quick snack.
