Description

A delightful twist on classic fudge, incorporating blueberry flavor for a unique treat.

Ingredients

Scale
  • 1/2 cup frozen blueberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon freshly squeezed lemon juice
  • 2½ teaspoons cornstarch
  • 3 cups good quality white baking chips
  • 1 cup sweetened condensed milk

Instructions

  1. Line an 8×8 baking dish with parchment paper, ensuring an overhang on two sides for easy removal.
  2. In a saucepan, combine frozen blueberries, sugar, lemon juice, and cornstarch over medium heat. Simmer while whisking for about 10 minutes until thickened.
  3. Use a fine-mesh strainer over a bowl to separate the blueberry mixture, pressing the berries to extract the juice. Discard hulls and chill the topping for 1 hour.
  4. In a microwave-safe bowl, combine white baking chips and sweetened condensed milk. Microwave for 1 minute, then heat in 30-second intervals, stirring until melted and smooth.
  5. Fold the chilled blueberry topping into the melted fudge mixture gently for a marbled effect.
  6. Pour the fudge into the baking dish, smooth the top, cover, and chill for 3-4 hours until set.
  7. Lift the fudge from the pan using parchment overhang and cut into 36 pieces. Keep refrigerated until serving.

Notes

  • Ensure the blueberries are not too watery before cooking to achieve the right consistency.
  • For a richer flavor, consider adding a pinch of salt to the fudge mixture.
  • Can be stored in an airtight container in the refrigerator for up to two weeks.
