- 2 ripe peaches, sliced
- 1 cup fresh blueberries
- 4 cups mixed greens (spinach, arugula, or butter lettuce)
- 1/3 cup crumbled feta cheese
- 1/4 cup toasted almonds or pecans
- 1/4 cup thinly sliced red onion (optional)
- Fresh basil or mint leaves for garnish (optional)
- 3 tablespoons olive oil
- 1 tablespoon honey (or maple syrup)
- 1 tablespoon fresh lemon juice (or balsamic vinegar)
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare the Dressing – In a small bowl or jar, whisk together olive oil, honey, lemon juice, Dijon mustard, salt, and pepper until smooth. Set aside.
- Toast the Nuts – In a dry skillet over medium heat, toast the almonds or pecans for 2-3 minutes, stirring frequently until golden and fragrant. Let them cool.
- Assemble the Salad – In a large bowl, layer mixed greens, sliced peaches, blueberries, crumbled feta, and red onion.
- Drizzle & Toss – Pour the dressing over the salad and gently toss to coat.
- Garnish & Serve – Top with toasted nuts and fresh basil/mint for an extra burst of flavor. Serve immediately!
Notes
- For a vegan option, omit feta cheese or use a plant-based alternative.
- This salad can be made ahead, but add the dressing just before serving to keep the greens fresh.
