Description

A quick and delicious stir fry featuring fresh bok choy and cremini mushrooms, perfect for a healthy meal.


Ingredients

Scale
  • 1 lb (450g) baby bok choy
  • 1 lb (450g) cremini mushrooms, halved
  • 3 tbsp peanut oil
  • 4 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 green onions, sliced
  • 23 dried red chilies (optional)
  • 3 tbsp soy sauce
  • 1 tbsp vegetarian oyster sauce
  • 1 tsp sugar
  • ½ tsp black pepper
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp water

Instructions

  1. Trim, rinse, and halve bok choy if large.
  2. Combine soy sauce, vegetarian oyster sauce, sugar, black pepper, and sesame oil to whisk the sauce.
  3. Steam bok choy in oil and water until tender. Set aside.
  4. Cook cremini mushrooms in the pan until golden brown.
  5. Sauté garlic, ginger, green onions, and dried chilies until fragrant.
  6. Pour in sauce mixture along with the cornstarch slurry and simmer until the sauce thickens and becomes glossy.
  7. Toss in the bok choy to incorporate with the sauce. Garnish and serve.

Notes

  • This dish can be made vegan by ensuring the vegetarian oyster sauce is properly labeled.
  • Adjust the amount of red chilies to your heat preference.
