Description
A quick and delicious stir fry featuring bok choy and cremini mushrooms, enhanced with garlic, ginger, and a flavorful sauce.

- 1 lb (450g) baby bok choy
- 1 lb (450g) cremini mushrooms, halved
- 3 tbsp peanut oil
- 4 garlic cloves, minced
- 1-inch ginger, grated
- 2 green onions, sliced
- 2–3 dried red chilies (optional)
- 3 tbsp soy sauce
- 1 tbsp vegetarian oyster sauce
- 1 tsp sugar
- ½ tsp black pepper
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp water
Instructions
- Trim, rinse, and halve bok choy if large.
- Combine soy sauce, vegetarian oyster sauce, sugar, black pepper, and sesame oil to whisk the sauce.
- Steam bok choy in oil and water until tender. Set aside.
- Cook cremini mushrooms in the pan until golden brown.
- Sauté garlic, ginger, green onions, and dried chilies until fragrant.
- Pour in sauce mixture along with the cornstarch slurry and simmer until the sauce thickens and becomes glossy.
- Toss in the bok choy to incorporate with the sauce. Garnish and serve.
Notes
- Adjust the number of chilies based on your heat preference.
- This dish pairs well with rice or noodles.
