Ingredients

  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, using an electric mixer, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Mix in the egg and vanilla extract until fully combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the milk. Start and end with the flour mixture, mixing until just combined.
  6. Gently fold in the chocolate chips.
  7. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let them cool on a wire rack.
  9. In a medium bowl, whip the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  10. Once the cookies are cool, use a piping bag or a spoon to fill the center of half the cookies with the whipped cream filling. Top with another cookie to create a sandwich.
  11. In a small saucepan over low heat, melt the chocolate chips and butter together, stirring until smooth.
  12. Drizzle the melted chocolate glaze over the top of each cookie sandwich. Allow it to set for a few minutes.
