Description

Buffalo Chicken Meatballs are a quick and delicious snack made with ground chicken, coated in Buffalo sauce, and served with dressing.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs (preferably panko)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped green onions or scallions
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional for extra heat)
  • 1/2 cup Buffalo wing sauce (such as Frank’s RedHot)
  • 2 tbsp unsalted butter
  • Ranch or blue cheese dressing, for drizzling and serving
  • Fresh chopped parsley, for garnish
  • Celery sticks, to serve on the side

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, chopped green onions, egg, minced garlic, salt, black pepper, paprika, and cayenne pepper (if using). Mix gently until just combined.
  3. Shape the mixture into small meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet with some space in between.
  4. Bake the meatballs for about 15-18 minutes, or until cooked through and lightly browned.
  5. While the meatballs are baking, melt the butter in a saucepan over low heat and stir in the Buffalo wing sauce until heated through.
  6. After the meatballs are done, transfer them to a bowl and pour the warm Buffalo sauce over them, tossing gently to coat.
  7. Arrange the coated meatballs on a serving plate, drizzling with ranch or blue cheese dressing, and garnish with fresh chopped parsley.
  8. Serve immediately with celery sticks on the side and extra dressing for dipping.

Notes

  • Do not overmix the meatball mixture to avoid tough meatballs.
  • Adjust the cayenne pepper based on your heat preference.
