Description
Buffalo Chicken Meatballs are a quick and delicious snack made with ground chicken, coated in Buffalo sauce, and served with dressing.

- 1 lb ground chicken
- 1/2 cup breadcrumbs (preferably panko)
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped green onions or scallions
- 1 large egg
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional for extra heat)
- 1/2 cup Buffalo wing sauce (such as Frank’s RedHot)
- 2 tbsp unsalted butter
- Ranch or blue cheese dressing, for drizzling and serving
- Fresh chopped parsley, for garnish
- Celery sticks, to serve on the side
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, chopped green onions, egg, minced garlic, salt, black pepper, paprika, and cayenne pepper (if using). Mix gently until just combined.
- Shape the mixture into small meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet with some space in between.
- Bake the meatballs for about 15-18 minutes, or until cooked through and lightly browned.
- While the meatballs are baking, melt the butter in a saucepan over low heat and stir in the Buffalo wing sauce until heated through.
- After the meatballs are done, transfer them to a bowl and pour the warm Buffalo sauce over them, tossing gently to coat.
- Arrange the coated meatballs on a serving plate, drizzling with ranch or blue cheese dressing, and garnish with fresh chopped parsley.
- Serve immediately with celery sticks on the side and extra dressing for dipping.
Notes
- Do not overmix the meatball mixture to avoid tough meatballs.
- Adjust the cayenne pepper based on your heat preference.
