- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup buffalo sauce (adjust heat level to taste)
- 1 cup shredded cheese (mix of cheddar and mozzarella)
- 8 flour tortillas (10-inch)
- 2 green onions, chopped (for garnish)
- Optional: Sour cream or ranch dressing (for dipping)
Instructions
- In a slow cooker or stovetop, cook chicken breasts for 20-25 minutes on medium heat until fully cooked. Shred the chicken using two forks.
- Combine shredded chicken with buffalo sauce and shredded cheese in a bowl; stir until well mixed.
- Place some filling at one end of each tortilla and roll tightly.
- Preheat oven to 400°F (200°C). Place taquitos seam-side down on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown and crispy.
- Let cool slightly and serve with sour cream or ranch dressing.
Notes
- Adjust the amount of buffalo sauce to control the heat.
- These taquitos can be made ahead of time and stored in the fridge before baking.
