Description

A delicious and spicy dish featuring shredded chicken mixed with buffalo sauce and cheese, rolled in tortillas and baked until crispy.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup buffalo sauce (adjust heat level to taste)
  • 1 cup shredded cheese (mix of cheddar and mozzarella)
  • 8 flour tortillas (10-inch)
  • 2 green onions, chopped (for garnish)
  • Optional: Sour cream or ranch dressing (for dipping)

Instructions

  1. In a slow cooker or stovetop, cook chicken breasts for 20-25 minutes on medium heat until fully cooked. Shred the chicken using two forks.
  2. Combine shredded chicken with buffalo sauce and shredded cheese in a bowl; stir until well mixed.
  3. Place some filling at one end of each tortilla and roll tightly.
  4. Preheat oven to 400°F (200°C). Place taquitos seam-side down on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown and crispy.
  5. Let cool slightly and serve with sour cream or ranch dressing.
