Description

A deliciously moist and rich Butter Pecan Cake, perfect for any celebration.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup pecans, chopped and toasted
  • 1 cup unsalted butter, for frosting, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract, for frosting
  • 24 tablespoons heavy cream, for frosting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Then, mix in the buttermilk and vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the toasted pecans gently with a spatula.
  6. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. While the cakes are cooling, prepare the frosting. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well. Add the vanilla extract and enough heavy cream to reach your desired consistency.
  9. Once the cakes are completely cooled, place one layer on a serving plate and spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake.

  • Toasting the pecans brings out their flavor; be careful not to burn them.
