Deliciously soft and buttery brown sugar cinnamon cookies that literally melt in your mouth.

- 1 cup unsalted butter, softened
- 1 cup packed brown sugar
- ¼ cup granulated sugar
- 1 large egg + 1 egg yolk
- 2 tsp vanilla extract
- 2¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 2 tsp ground cinnamon
- ¼ cup granulated sugar (for cinnamon swirl)
- Coarse sugar or cinnamon sugar (for rolling, optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (2–3 minutes). Beat in the egg, egg yolk, and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients just until combined. Avoid overmixing to keep cookies soft.
- Scoop dough into 2-tablespoon balls. Roll lightly in coarse sugar if desired. Place on the prepared baking sheet 2½ inches apart.
- Mix cinnamon and sugar together. Press a thumb or spoon gently into the center of each cookie and sprinkle the cinnamon sugar into the indentation. Lightly swirl with your finger or spoon.
- Bake in preheated oven for 9–11 minutes, until edges are set but centers are still soft and slightly puffed.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For a more intense cinnamon flavor, increase the amount of ground cinnamon.
- Make sure not to overbake to keep the cookies soft and chewy.
- These cookies can be stored in an airtight container for up to a week.
