- 1⁄2 pound ground pork
- 1⁄2 cup breadcrumbs
- 1⁄4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder

- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon cayenne pepper

- 1 medium onion, diced
- 1 medium bell pepper, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1 bay leaf
- 1⁄2 teaspoon smoked paprika
- 1⁄4 teaspoon crushed red pepper flakes
- 1⁄4 cup fresh parsley, chopped
- 2 tablespoons green onions, sliced
- 1 cup cooked rice
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan cheese, egg, garlic powder, onion powder, paprika, dried thyme, dried oregano, cayenne pepper, salt, and black pepper.
- Use your hands or a spoon to mix the ingredients together until well combined.
- Form the mixture into meatballs, about 1 to 1 1/2 inches in diameter, and place them on a baking sheet lined with parchment paper.
- Bake the meatballs in the preheated oven for 15-20 minutes, or until they are golden brown and cooked through.
- While the meatballs are baking, heat the olive oil in a large pot over medium heat.
- Add the diced onion, bell pepper, and celery to the pot and sauté for about 5 minutes, or until the vegetables have softened.
- Add the minced garlic to the pot and cook for an additional 1 minute, stirring constantly to avoid burning the garlic.
- Stir in the diced tomatoes, beef broth, tomato paste, Worcestershire sauce, and bay leaf.
- Add the smoked paprika and crushed red pepper flakes to the pot and stir everything together.
- Once the meatballs are done baking, carefully add them to the pot with the simmering stew.
- Bring the stew to a simmer, then cover the pot and cook for 20-25 minutes to allow the flavors to meld together.
- Remove the bay leaf from the stew and discard it.
- Taste the stew and adjust seasoning with additional salt and pepper if desired.
- Stir in the chopped fresh parsley and sliced green onions just before serving.
- Serve the stew over the cooked rice, and enjoy your Cajun Meatball Stew.
