  • 1⁄2 pound ground pork
  • 1⁄2 cup breadcrumbs
  • 1⁄4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 bay leaf
  • 1⁄2 teaspoon smoked paprika
  • 1⁄4 teaspoon crushed red pepper flakes
  • 1⁄4 cup fresh parsley, chopped
  • 2 tablespoons green onions, sliced
  • 1 cup cooked rice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan cheese, egg, garlic powder, onion powder, paprika, dried thyme, dried oregano, cayenne pepper, salt, and black pepper.
  3. Use your hands or a spoon to mix the ingredients together until well combined.
  4. Form the mixture into meatballs, about 1 to 1 1/2 inches in diameter, and place them on a baking sheet lined with parchment paper.
  5. Bake the meatballs in the preheated oven for 15-20 minutes, or until they are golden brown and cooked through.
  6. While the meatballs are baking, heat the olive oil in a large pot over medium heat.
  7. Add the diced onion, bell pepper, and celery to the pot and sauté for about 5 minutes, or until the vegetables have softened.
  8. Add the minced garlic to the pot and cook for an additional 1 minute, stirring constantly to avoid burning the garlic.
  9. Stir in the diced tomatoes, beef broth, tomato paste, Worcestershire sauce, and bay leaf.
  10. Add the smoked paprika and crushed red pepper flakes to the pot and stir everything together.
  11. Once the meatballs are done baking, carefully add them to the pot with the simmering stew.
  12. Bring the stew to a simmer, then cover the pot and cook for 20-25 minutes to allow the flavors to meld together.
  13. Remove the bay leaf from the stew and discard it.
  14. Taste the stew and adjust seasoning with additional salt and pepper if desired.
  15. Stir in the chopped fresh parsley and sliced green onions just before serving.
  16. Serve the stew over the cooked rice, and enjoy your Cajun Meatball Stew.
