Description

Caprese Chicken is a delicious Italian dish featuring seared chicken breasts topped with fresh tomatoes, mozzarella, basil, and a balsamic glaze.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 2 large ripe tomatoes, sliced
  • 8 ounces fresh mozzarella, sliced
  • ½ cup fresh basil leaves, torn
  • ⅓ cup balsamic vinegar
  • 1 tablespoon honey

Instructions

  1. Season chicken: Season both sides of the chicken breasts evenly with kosher salt and freshly ground black pepper.
  2. Sear chicken: Heat olive oil in a large skillet over medium-high heat. Place chicken breasts in the skillet and sear for 5 to 6 minutes per side until golden brown and the internal temperature reaches 165°F (74°C). Remove and set aside.
  3. Assemble Caprese topping: Reduce heat to medium. Arrange tomato slices atop the seared chicken breasts, then layer with sliced mozzarella. Cover skillet and cook for 2 to 3 minutes until the cheese has melted.
  4. Prepare balsamic glaze: Combine balsamic vinegar and honey in a small saucepan over medium heat. Simmer for 5 to 7 minutes, stirring occasionally, until thickened to a syrupy consistency.
  5. Finish and serve: Sprinkle torn fresh basil leaves over the chicken and drizzle with the prepared balsamic glaze before serving.

  • For a richer flavor, use heirloom tomatoes.
  • Serve over a bed of arugula or spinach for added greens.
