Classic Italian Caprese with a Pasta Twist
Ingredients

- 2 cups cooked pasta (penne, fusilli, or bowtie)
- 1 ½ cups cherry tomatoes, halved
- 1 cup fresh mozzarella balls (bocconcini or ciliegine), halved
- 1/4 cup fresh basil leaves, torn
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic glaze
- Salt and black pepper, to taste
Optional: 1 teaspoon Dijon mustard (for an extra tangy note)
Instructions
- Cook pasta according to package directions. Drain, rinse under cold water, and let cool completely.
- In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella, and basil.
- In a small bowl, whisk together olive oil, balsamic glaze, and Dijon mustard (if using). Season with salt and pepper.
- Pour the dressing over the salad and toss until well coated.
- Chill for 15–30 minutes before serving. Drizzle with extra balsamic glaze and sprinkle with fresh basil before serving.
