- 1/2 banana, sliced (for topping)

Instructions
- In a medium bowl, combine the rolled oats, almond milk, brown sugar, vanilla extract, ground cinnamon, and salt. Stir until the brown sugar is well mixed and dissolved.
- If you want extra creaminess, fold in the Greek yogurt until fully incorporated.
- Cover the bowl with plastic wrap or transfer the mixture to an airtight container and refrigerate overnight (or at least 4 hours) to allow the oats to absorb the liquid and soften.
- In the morning, give the oats a good stir. If the mixture is too thick, you can add a splash of milk to reach your desired consistency.
- Serve the oats in bowls and top with sliced banana, chopped walnuts or pecans, and a drizzle of maple syrup if desired.
