Description

A delicious and comforting dish featuring caramelized onions, crispy turkey bacon, and creamy cauliflower cheese.


Ingredients

  • pounds cauliflower, cored and chopped into florets
  • 1 tablespoon olive oil or butter
  • 1 medium onion, thinly sliced
  • 5 slices turkey bacon, finely chopped
  • ½ teaspoon smoked paprika, plus extra for garnish
  • ½ teaspoon garlic powder
  • 2 ounces softened cream cheese (low-fat if desired)
  • ⅓ cup plain Greek yogurt
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup thinly sliced green onions (about 2 green onions)
  • Salt and freshly ground black pepper, to taste
  • Cooking spray or a drizzle of olive oil, for greasing

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish with cooking spray or olive oil.
  2. Bring a large pot of salted water to a boil, add cauliflower florets, and simmer for 10–15 minutes until very tender. Drain and return to the pot.
  3. In a skillet, heat olive oil or butter, add sliced onions with a pinch of salt, and cook for 10–12 minutes until soft and golden brown.
  4. Add chopped turkey bacon to the skillet and cook for 5–6 minutes until crisp, then transfer to a paper towel-lined plate.
  5. Add smoked paprika, garlic powder, salt, pepper, and cream cheese to the cooked cauliflower and blend until smooth. Mix in Greek yogurt and most of the cheese, reserving some for topping.
  6. Stir in the caramelized onions, crispy turkey bacon, and green onions into the cauliflower mixture, saving a small portion of each for topping.
  7. Transfer the creamy mixture to the prepared baking dish, spread evenly, and top with reserved cheese, onions, and bacon.
  8. Bake uncovered for 20 minutes or until bubbly and golden, let rest for a few minutes, then sprinkle with extra smoked paprika and green onions before serving.

Notes

  • Can use regular bacon instead of turkey bacon for a different flavor.
  • Low-fat options for cream cheese and yogurt can be used to reduce calories.
