Description
A delicious fusion dish combining cheesy beef and enchiladas with tortellini.

- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 tablespoon taco seasoning
- 1 package (9 oz) cheese tortellini
- 2 cups shredded cheddar cheese
- 1 cup enchilada sauce
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped (optional for garnish)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large skillet, heat about 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic to the skillet and cook for an additional 1 minute.
- Next, add the ground beef to the skillet. Cook until browned, about 5-7 minutes, and drain excess fat if necessary.
- Stir in the black beans, diced tomatoes with green chilies, and taco seasoning. Simmer for about 5 minutes. Season with salt and pepper to taste.
- In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to the package instructions, about 3-5 minutes until they float.
- Drain the tortellini and set aside.
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked tortellini with the beef filling and gently fold together.
- In a 9×13 inch baking dish, spread a thin layer of enchilada sauce on the bottom.
- Transfer the tortellini and beef mixture into the baking dish, spreading it evenly.
- Pour the remaining enchilada sauce over the tortellini mixture.
- Sprinkle the shredded cheddar cheese generously over the top.
- Cover with aluminum foil and bake for 20 minutes.
- Remove foil and bake for an additional 10-15 minutes, until cheese is melted and bubbly.
- Let it cool for about 5 minutes before serving.
Notes
- Can add extra toppings like avocado or jalapenos if desired.
- Be careful not to overcook the tortellini as they will continue to cook in the oven.
