Ingredients for Cheesy Chicken Pasta

Gathering the right ingredients is the first step to creating my delicious cheesy chicken pasta. Here’s what you’ll need to whip up this creamy delight:

  • Pasta: I like to use a hearty pasta shape like penne or rotini. These hold the sauce beautifully, making every bite packed with flavor.
  • Oil: A drizzle of olive oil adds richness. You can use any mild oil you have on hand, if you prefer.
  • Garlic: Fresh garlic brings in an aromatic punch. If you’re short on time, garlic powder can be a quick alternative!
  • Chicken: Tender, bite-sized pieces of chicken make this dish filling. You can also use rotisserie chicken or tofu for a meat-free option.
  • Seasonings: Salt, black pepper, and a touch of red chili powder offer a flavor boost. Customize them to fit your taste buds.
  • Cheeses: Mozzarella is my go-to for that melty goodness. Feel free to substitute with cheddar or parmesan for a different flavor twist.
  • Milk & Cream: These create the luscious, creamy sauce. For a lighter option, swap out the cream for unsweetened almond milk.
  • Tomato Paste: A spoonful enriches the sauce, giving it a beautiful depth. You can also use a marinara sauce if you have some left over.
  • Pasta Water: Don’t forget to save some! This starchy water helps thicken the sauce and bind everything together.

The exact measurements are conveniently listed at the bottom of this article for your ease. Happy cooking!

How to Make Cheesy Chicken Pasta

Now that you have all your ingredients ready, it’s time to dive into the delightful process of making cheesy chicken pasta. Follow these steps, and you’ll be savoring this creamy dish before you know it!

Step 1: Boil the Pasta

Start by bringing a large pot of water to a boil. Add a sprinkle of salt and a dash of oil to keep the pasta from sticking. Toss in your pasta and cook until it’s al dente, or slightly firm. Remember, the pasta will soak up the creamy sauce later, so you don’t want it too mushy!

Step 2: Cook the Garlic

While the pasta is cooking, let’s build some flavor! In a separate pan, heat up a splash of oil over medium heat, then add minced garlic. Sauté it until it turns a lovely golden color. This step releases that unmistakable aroma that sets the stage for your delicious meal!

Step 3: Cook the Chicken

Next up, we have the chicken. Add bite-sized chicken pieces to the pan with the garlic. Cook them over medium-high heat, stirring often. You want them to turn a nice white color, ensuring they’re fully cooked and tender. This usually takes about 4 minutes—watch closely!

Step 4: Season the Chicken

Now, let’s get that chicken seasoned! Sprinkle in salt, black pepper, red chili powder, garlic powder, paprika, onion powder, and oregano. Mix it all together to coat the chicken evenly. This blend of spices is what will elevate your cheesy chicken pasta to a flavor sensation!

Step 5: Add Tomato Paste

Once your chicken is well-seasoned, it’s time to add a bit of color and richness! Stir in the tomato paste along with a dab of chili sauce or sriracha for an extra kick. Let this simmer for about a minute, letting the flavors mingle. This paste will give your sauce a deep, wonderful flavor.

Step 6: Make the Creamy Sauce

Next, pour in the milk and double cream. Stir continuously as you bring the mixture to a gentle boil. You’ll want this on medium-high heat, as it thickens beautifully. In about a minute or so, you should see it bubbling, creating that creamy sauce we all dream about.

Step 7: Add the Cheese

As the sauce bubbles, it’s time for the star of the show—cheese! Add your mozzarella first, stirring it gently until it melts into the creaminess. This is where your sauce transforms into that mouthwatering, cheesy goodness that makes our hearts flutter!

Step 8: Blend in Pasta Water

Before you add the pasta, don’t forget about the pasta water! Gradually mix some into the sauce to achieve that perfect consistency. This starchy liquid will help bind everything together, ensuring your cheesy chicken pasta is creamy, but not too thick.

Step 9: Combine with Pasta

Now for the grand finale! Add your drained pasta to the pan. Toss it with the creamy sauce until every piece is beautifully coated. The sauce should cling to the pasta lovingly. If it’s too thick, a bit more pasta water will do the trick!

Step 10: Serve and Enjoy!

Finally, sprinkle a little extra cheese on top for that finishing touch. Cover the pan with a lid and let it sit on low heat for a couple of minutes, just until everything melds together beautifully. Now, your cheesy chicken pasta is ready to serve! Ladle it onto plates and watch your loved ones smile as they dig into this creamy delight!

Tips for Success

  • Boil pasta in well-salted water for maximum flavor.
  • Always reserve a cup of pasta water; it’s the secret to a beautifully creamy sauce.
  • Don’t rush cooking the garlic. A light golden color is what you want!
  • Feel free to customize spices based on your family’s taste preferences.
  • For extra creaminess, don’t hesitate to add more double cream!

Equipment Needed

  • Large Pot: For boiling pasta; a deep skillet can work too.
  • Frying Pan: A non-stick pan is ideal for cooking chicken and making the sauce.
  • Wooden Spoon: Essential for stirring without scratching your pans.
  • Measuring Cups: For accurate liquid measurements; a kitchen scale can be handy too.
  • Colander: To drain pasta; a slotted spoon could be a good alternative.

Variations on Cheesy Chicken Pasta

A creamy and delicious cheesy chicken pasta dish that is sure to satisfy your cravings.

Ingredients

Scale
  • 250g pasta, uncooked (around 8oz)
  • 2 tbsps oil
  • 4 cloves garlic, minced
  • 275g chicken, cut into bite-sized pieces (around 9.6 oz)
  • 1/2 tsp salt (adjust to your taste)
  • 1/2 tsp black pepper
  • 1/2 tsp red chilli powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/4 tsp oregano
  • 2 tbsps tomato paste
  • 1 tsp chilli sauce/sriracha
  • 130ml milk (1/2 cup + 1 tbsp)
  • 110ml double cream (1/4 cup + 3 tbsps)
  • 100g mozzarella cheese + extra to sprinkle on top (1 cup + extra)
  • 100120ml pasta water (around 1/2 cup)

Instructions

  1. Boil pasta: add pasta to a pot with some cold water, salt and a little bit of oil. Cook pasta until al dente – it should be slightly firm and not overly cooked so that it doesn’t become too soft once cooked in the sauce.
  2. Cook garlic: in a pan, warm up some oil, then add fresh, minced garlic. Cook this over medium heat for around 1 minute or until the garlic becomes a light golden colour.
  3. Cook chicken: add the bite-sized pieces of chicken to the pan. Cook these over medium-high heat, stirring as you cook, for around 3-4 minutes or until the chicken turns a white colour.
  4. Seasonings: add salt, black pepper, red chilli powder, garlic powder, paprika, onion powder and oregano and mix this into the chicken.
  5. Add tomato paste: add a little bit of sriracha and the tomato paste and cook this in over medium-high heat for about 1 minute.
  6. Making the sauce: gradually add milk and cream and stir this in. Cook at medium-high heat while continuously stirring for about 1 minute or until the mixture starts bubbling.
  7. Add cheese: add your choice of cheese and gently mix it in until the cheese has melted and has fully incorporated into the sauce.
  8. Add pasta water: gradually add leftover pasta water and mix it into the sauce. Then, bring the mixture to a boil and keep stirring as you bring it to a boil – this took me about 1.5 minutes.
  9. Add pasta: at this point your sauce should be quite thick and creamy. Add your cooked pasta and coat it fully with the sauce. Add a final sprinkle of cheese to the top, then cover with a lid and let the pasta cook over low heat until the cheese is melted.
  10. Serve, and let’s eat!
