  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, finely chopped (cremini or white button)
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper for easier cleanup.
  2. In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the chopped mushrooms and sauté for about 5 minutes, or until they begin to soften and release their moisture. Add the minced garlic, thyme, parsley, and a pinch of salt and pepper. Cook for an additional 2 minutes until fragrant. Set aside to cool slightly.
  3. In a bowl, combine the sautéed mushroom mixture with cream cheese and mozzarella cheese. Stir until smooth and evenly incorporated.
  4. Carefully slice each chicken breast horizontally (without cutting all the way through) to create a pocket.
  5. Spoon the cheesy mushroom mixture evenly into each chicken breast. Use toothpicks to secure the openings if needed.
  6. Melt the remaining 2 tablespoons of butter in the same skillet over medium-high heat. Sear the stuffed chicken breasts for 2–3 minutes per side until golden brown.
  7. Transfer the seared chicken breasts to the prepared baking dish. Sprinkle grated Parmesan cheese over the top. Bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Once done, let the chicken rest for 5 minutes before serving. Sprinkle with fresh parsley for a pop of color and freshness.
