- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped (cremini or white button)
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper, to taste
- 1/4 cup grated Parmesan cheese
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper for easier cleanup.
- In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the chopped mushrooms and sauté for about 5 minutes, or until they begin to soften and release their moisture. Add the minced garlic, thyme, parsley, and a pinch of salt and pepper. Cook for an additional 2 minutes until fragrant. Set aside to cool slightly.
- In a bowl, combine the sautéed mushroom mixture with cream cheese and mozzarella cheese. Stir until smooth and evenly incorporated.
- Carefully slice each chicken breast horizontally (without cutting all the way through) to create a pocket.
- Spoon the cheesy mushroom mixture evenly into each chicken breast. Use toothpicks to secure the openings if needed.
- Melt the remaining 2 tablespoons of butter in the same skillet over medium-high heat. Sear the stuffed chicken breasts for 2–3 minutes per side until golden brown.
- Transfer the seared chicken breasts to the prepared baking dish. Sprinkle grated Parmesan cheese over the top. Bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
- Once done, let the chicken rest for 5 minutes before serving. Sprinkle with fresh parsley for a pop of color and freshness.
