Cheesy Pepperoni Pizza Roll-Ups are a delicious and easy-to-make snack or meal, featuring melted mozzarella cheese and pepperoni wrapped in a low-carb tortilla.

- 4 cups shredded mozzarella cheese
- 8 low-carb tortillas
- ½ cup pizza sauce
- 48 slices pepperoni
Instructions
- Place a large nonstick skillet over medium-high heat.
- Sprinkle ½ cup of mozzarella cheese in the center of the skillet and let it melt without stirring.
- Once the cheese begins to melt and bubble, place a tortilla on top, gently pressing it into the melted cheese.
- When the cheese starts to brown and crisp, carefully flip the tortilla. The cheese should be attached to the tortilla.
- Spread about 1 tablespoon of pizza sauce in the center of the tortilla and top with 6 slices of pepperoni.
- Roll the tortilla carefully from one side to the other, securing the cheese and pepperoni inside.
- Repeat the steps with the remaining ingredients to make more pizza roll-ups.
