Description

A quick and tasty dish combining cheesy goodness with scrambled eggs and potatoes.

Ingredients

Scale
  • 4 medium potatoes, diced
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup cooked ham or bacon, chopped (optional)
  • 1/4 cup green onions or chives, chopped
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Start by boiling the diced potatoes in a pot of salted water for about 10-15 minutes, or until they are fork-tender. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the boiled potatoes and cook until they become golden and slightly crispy, about 5-7 minutes.
  3. If using, add the chopped ham or bacon to the skillet and cook for an additional 2-3 minutes, until heated through.
  4. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  5. Pour the egg mixture over the potatoes in the skillet. Gently stir to combine, allowing the eggs to cook and scramble with the potatoes. Let it cook for about 5 minutes, stirring occasionally.
  6. Once the eggs are fully cooked, sprinkle the shredded cheddar cheese over the top. Cover the skillet with a lid and cook for an additional 2-3 minutes, until the cheese is melted and gooey.
  7. Remove from heat and garnish with chopped green onions or chives before serving. Enjoy your Cheesy Potato Egg Scramble warm!

Notes

  • Feel free to mix in any veggies you have on hand! Bell peppers, spinach, or mushrooms make great additions. Just sauté them with the potatoes.
  • Swap out the cheddar for something different—Swiss, pepper jack, or even feta can all add unique flavors.
  • If you’re a spice lover, consider adding a pinch of cayenne pepper or some hot sauce for an extra kick.
  • This dish is perfect for meal prep! Make a batch ahead of time and store portions in the fridge—just reheat for a quick meal.
