Description

Cherry Cobbler Muffins are a delicious blend of cherry pie filling and fluffy muffin batter, topped with a crumbly streusel for a delightful treat.


Ingredients

  • 2 teaspoons baking powder
  • 2 large eggs
  • ¼ cup salted butter, melted and cooled
  • ½ cup granulated sugar

  • ¾ cup milk
  • 21 ounces cherry pie filling, divided in half
  • ¼ cup salted butter, cold and cut into cubes
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ cup granulated sugar
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon milk or heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with liners.
  2. In a mixing bowl, combine the flour, salt, and baking powder.
  3. In another bowl, whisk together the eggs, melted butter, sugar, vanilla, and milk.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Gently fold in half of the cherry pie filling.
  6. Fill each muffin liner with the batter and top with the remaining cherry pie filling.
  7. For the streusel topping, mix cold butter, flour, baking powder, sugar, and cinnamon in a bowl until crumbly.
  8. Sprinkle the streusel mixture on top of the muffins.
  9. Bake for 20 minutes or until a toothpick comes out clean.
  10. Let cool before serving.
