Chocolate Peanut Butter Cup Stuffed Donuts are deliciously indulgent donuts filled with creamy peanut butter and topped with a rich chocolate glaze.


Ingredients

  • 2 and 1/4 teaspoons active dry yeast (one packet)
  • 1/4 cup granulated sugar
  • 3 and 1/2 cups all-purpose flour, plus more for dusting

  • 1 large egg, at room temperature
  • 1/4 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 2 tablespoons milk or cream, as needed
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 cup chopped peanut butter cups
  • 1/4 cup chopped roasted peanuts (optional)

Instructions

  1. In a large bowl, combine the warm milk, yeast, and 1 tablespoon of the granulated sugar. Let it sit for 5-10 minutes until foamy.
  2. Add the remaining granulated sugar, flour, salt, egg, melted butter, and vanilla extract to the yeast mixture. Mix until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  4. Lightly grease a clean bowl, place the dough in it, cover, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  5. Prepare the peanut butter filling by whisking together peanut butter, powdered sugar, and salt, then adding milk or cream as needed for a thick consistency.
  6. Once the dough has doubled, punch it down and roll it to about 1/2 inch thick. Cut out donut shapes.
  7. Transfer the cut donuts to a baking sheet, cover loosely, and let them rise for another 30-45 minutes.
  8. Heat about 3-4 inches of vegetable oil to 350-375°F. Fry 2-3 donuts at a time for 1-2 minutes per side until golden brown.
  9. Remove the fried donuts and allow them to cool completely.
  10. Make the chocolate glaze by combining chocolate chips and heavy cream in a microwave-safe bowl and heating until smooth.
  11. Use a piping bag to fill each donut with the peanut butter filling.
  12. Dip the tops of the filled donuts in the chocolate glaze and sprinkle with chopped peanut butter cups and peanuts.
