Description

Chopped Cheese Burritos are a delicious twist on traditional burritos, featuring seasoned ground beef, melted cheese, and fresh toppings wrapped in a flour tortilla.


Ingredients

  • 1 lb ground beef (80/20 for best flavor)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • Salt & pepper, to taste
  • ½ teaspoon garlic powder
  • 4 large flour tortillas (burrito size)
  • 1 cup shredded iceberg lettuce
  • 1 large tomato, diced
  • 4 slices American cheese (or substitute cheddar or pepper jack)
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • Optional additions: hot sauce, pickles, jalapeños, grilled onions, avocado

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add the onions and sauté for 2–3 minutes.
  2. Add the ground beef, season with salt, pepper, and garlic powder, and cook until browned, chopping and mashing the beef into small pieces.
  3. Once the beef is fully cooked and chopped, reduce heat to low. Lay cheese slices over the top and let them melt into the meat, stirring gently.
  4. In a small bowl, mix mayo and ketchup, adding hot sauce or mustard if desired.
  5. Warm the tortillas slightly, spread sauce onto each, add beef & cheese mixture, shredded lettuce, tomatoes, and optional toppings. Fold in the sides, then roll tightly.
  6. For extra crunch, place the burritos seam-side down on a hot skillet or griddle for 1–2 minutes per side until golden and crisp.

  • For a spicier burrito, consider adding jalapeños or hot sauce.
