Description

Ingredients

  • 1/4 cup unsalted butter (room temperature)
  • 2 tbsp heavy cream
  • Green food coloring (to desired shade)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy (about 3 minutes).
  4. Add eggs one at a time along with vanilla extract; beat well after each addition.
  5. Gradually mix in the dry ingredients alternately with milk until just combined.
  6. Fill each muffin tin about two-thirds full and bake for 12-15 minutes or until they spring back when touched. Cool completely.
  7. For frosting, mix powdered sugar, butter, heavy cream, and food coloring until smooth; pipe onto cooled cupcakes.
