  • 210 grams brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 325 grams whole wheat flour
  • 3 tablespoons granulated sugar
  • 315 grams Granny Smith or baking apples

Instructions

  1. Set the oven temperature to 175°C.
  2. In a large mixing bowl, whisk together Greek yogurt, applesauce, eggs, milk, vanilla extract, and brown sugar until the mixture is smooth and homogeneous.
  3. Incorporate baking powder, baking soda, cinnamon, and salt into the wet mixture, whisking until fully combined.
  4. Gently fold in whole wheat flour and chopped apples with a spatula just until all flour is moistened; avoid overmixing.
  5. Lightly grease a non-stick muffin tin or line with paper liners, then fill each cup to the brim with batter.
  6. Place the muffin tin in the oven and bake for 20 to 25 minutes, until a toothpick inserted into the center emerges clean or with moist crumbs.
  7. Allow muffins to cool in the pan for 5 to 10 minutes before transferring to a wire rack to cool completely.
