Cinnamon Coffee Crinkles are delightful cookies combining the flavors of cinnamon and coffee, resulting in a soft and chewy texture with a beautiful crinkle top.

- 1 ½ cups all-purpose flour
- 1 ½ tsp ground cinnamon
- 1 tsp baking powder
- ¼ tsp salt
- 2 tbsp instant coffee granules
- 1 tsp vanilla extract
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 1 large egg
- ¼ cup granulated sugar (for rolling)
- ¼ cup powdered sugar (for rolling)
Instructions
- In a medium bowl, whisk together 1 ½ cups all-purpose flour, 1 ½ tsp ground cinnamon, 1 tsp baking powder, and ¼ tsp salt. Set aside.
- In a small bowl, mix 2 tbsp instant coffee granules with 1 tsp vanilla extract until dissolved.
- In a large bowl, beat ½ cup unsalted butter, melted, and ¾ cup brown sugar until smooth. Mix in 1 large egg and the coffee mixture from Step 2 until fully combined.
- Gradually add the dry ingredients from Step 1 to the wet ingredients from Step 3, mixing until just combined. The dough will be soft and slightly sticky.
- Cover the dough and refrigerate for 30 minutes to firm up.
- Scoop the chilled dough into small balls. Roll each one in ¼ cup granulated sugar first, then in ¼ cup powdered sugar for the crinkle effect.
- Place the coated dough balls on a parchment-lined baking sheet, spacing them apart. Bake at 350°F (175°C) for 10–12 minutes until crinkled and set.
- Let the cookies cool for a few minutes on the baking sheet before transferring to a wire rack. Enjoy warm or at room temperature!
Notes
- Make sure to chill the dough to achieve the perfect crinkle effect.
- These cookies can be stored in an airtight container for several days.
- For a stronger coffee flavor, increase the amount of instant coffee granules.
