Description

Cinnamon Coffee Crinkles are delightful cookies combining the flavors of cinnamon and coffee, resulting in a soft and chewy texture with a beautiful crinkle top.


Ingredients

  • 1 ½ tsp ground cinnamon
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp instant coffee granules
  • 1 tsp vanilla extract
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 1 large egg
  • ¼ cup granulated sugar (for rolling)
  • ¼ cup powdered sugar (for rolling)

Instructions

  1. In a medium bowl, whisk together 1 ½ cups all-purpose flour, 1 ½ tsp ground cinnamon, 1 tsp baking powder, and ¼ tsp salt. Set aside.
  2. In a small bowl, mix 2 tbsp instant coffee granules with 1 tsp vanilla extract until dissolved.
  3. In a large bowl, beat ½ cup unsalted butter, melted, and ¾ cup brown sugar until smooth. Mix in 1 large egg and the coffee mixture from Step 2 until fully combined.
  4. Gradually add the dry ingredients from Step 1 to the wet ingredients from Step 3, mixing until just combined. The dough will be soft and slightly sticky.
  5. Cover the dough and refrigerate for 30 minutes to firm up.
  6. Scoop the chilled dough into small balls. Roll each one in ¼ cup granulated sugar first, then in ¼ cup powdered sugar for the crinkle effect.
  7. Place the coated dough balls on a parchment-lined baking sheet, spacing them apart. Bake at 350°F (175°C) for 10–12 minutes until crinkled and set.
  8. Let the cookies cool for a few minutes on the baking sheet before transferring to a wire rack. Enjoy warm or at room temperature!
