Description

Deliciously fluffy muffins inspired by cinnamon rolls, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar (for filling)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, granulated sugar, cinnamon, and salt.
  3. In another bowl, mix milk, melted butter, eggs, and vanilla until smooth.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. In a small bowl, mix brown sugar and cinnamon for the filling. Swirl half into the batter before adding more batter on top.
  6. Fill each muffin cup two-thirds full and bake for 18-20 minutes or until golden brown.
