Description

Cloud eggs blue cheese bacon are a fluffy and flavorful brunch dish featuring whipped egg whites, creamy blue cheese, and crispy bacon, creating a delightful combination.


Ingredients

  • 2 large eggs
  • 2 tablespoons blue cheese, crumbled
  • 2 slices bacon, cooked until crisp and crumbled
  • 1/8 teaspoon freshly ground black pepper
  • Pinch sea salt
  • 1 tablespoon chives, finely chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 200°C. Line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks, keeping yolks whole and placing each into a small separate bowl.
  3. In a clean mixing bowl, whisk the egg whites with a pinch of salt using an electric mixer or whisk until stiff peaks form.
  4. Gently fold the crumbled blue cheese and most of the crumbled bacon into the whipped egg whites, saving a portion of bacon for topping.
  5. Spoon the egg white mixture onto the prepared baking sheet in two equal mounds. Create a shallow well in the center of each using the spoon’s back.
  6. Bake the egg whites for 3 minutes until lightly set.
  7. Carefully slide one yolk into the well of each baked egg white cloud.
  8. Return to the oven and bake an additional 3–4 minutes, until the yolks are just set but remain runny.
  9. Remove from the oven. Top with reserved bacon, freshly ground black pepper, and chives. Serve immediately.

Notes

  • For a spicier version, add a pinch of cayenne pepper to the egg whites.
  • This dish is best enjoyed fresh out of the oven for optimal fluffiness.
