Description

Delicious corn fritters that are crispy on the outside and tender on the inside, perfect as a snack or appetizer.


Ingredients

  • 1 can (15 oz) of whole kernel corn, drained
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1 large egg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped green onions (optional)
  • 2 tbsp butter, melted (plus more for frying)
  • Vegetable oil for frying

Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and pepper.
  2. Add milk and egg to the dry ingredients and stir until smooth.
  3. Stir in the drained corn and chopped green onions (optional).
  4. Heat a skillet or frying pan over medium heat and add a little butter or oil.
  5. Drop spoonfuls of the corn mixture into the skillet, flattening them slightly to form fritters.
  6. Fry for 2-3 minutes on each side, or until golden brown and crispy.
  7. Remove the fritters and place them on a paper towel-lined plate to drain excess oil.
  8. Repeat until all fritters are cooked.
  9. Serve immediately with your favorite dipping sauce or enjoy on their own!

Notes

  • Ensure the oil is hot enough to prevent the fritters from absorbing too much oil.
  • Experiment with different spices or add cheese for extra flavor.
  • Store leftover fritters in an airtight container in the fridge for up to 2 days.
