Delicious corn fritters that are crispy on the outside and tender on the inside, perfect as a snack or appetizer.

- 1 can (15 oz) of whole kernel corn, drained
- 1 cup all-purpose flour
- 1/2 cup milk
- 1 large egg
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped green onions (optional)
- 2 tbsp butter, melted (plus more for frying)
- Vegetable oil for frying
Instructions
- In a large bowl, whisk together flour, baking powder, salt, and pepper.
- Add milk and egg to the dry ingredients and stir until smooth.
- Stir in the drained corn and chopped green onions (optional).
- Heat a skillet or frying pan over medium heat and add a little butter or oil.
- Drop spoonfuls of the corn mixture into the skillet, flattening them slightly to form fritters.
- Fry for 2-3 minutes on each side, or until golden brown and crispy.
- Remove the fritters and place them on a paper towel-lined plate to drain excess oil.
- Repeat until all fritters are cooked.
- Serve immediately with your favorite dipping sauce or enjoy on their own!
Notes
- Ensure the oil is hot enough to prevent the fritters from absorbing too much oil.
- Experiment with different spices or add cheese for extra flavor.
- Store leftover fritters in an airtight container in the fridge for up to 2 days.
