- 2 cups cooked chicken, shredded or chopped
- 1 cup cottage cheese (small curd recommended)
- 2 tbsp mayonnaise
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red onion
- 1/4 cup dried cranberries (optional, for sweetness)
- 1 tbsp Dijon mustard
- 1/4 tsp garlic powder
- Salt and pepper to taste
- 8 slices of whole-grain bread or 4 sandwich rolls
- Optional toppings: lettuce leaves, sliced tomato
Instructions
- In a large bowl, combine chicken, cottage cheese, mayonnaise, celery, red onion, cranberries (if using), Dijon mustard, garlic powder, salt, and pepper. Mix well until fully combined.
- Lay out the bread slices or sandwich rolls. Add a layer of lettuce and sliced tomato, if desired.
- Spoon the chicken salad mixture onto one slice of bread or the bottom half of the roll, then top with the other slice or half.
- Cut in half for easier eating and serve immediately. Perfect with a side of chips, fresh fruit, or a simple salad.
Notes
- For added flavor, you can season the chicken with herbs like dill or parsley.
