  • 2 eggs
  • 1 cup oat flour (or almond flour for a lower-carb option)
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon olive oil (optional, for extra softness)
  • ½ teaspoon garlic powder or Italian seasoning (optional, for added flavor)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it with oil or cooking spray.
  2. In a food processor or blender, blend the cottage cheese until smooth.
  3. In a mixing bowl, whisk together the eggs, blended cottage cheese, and olive oil. Add in the oat flour, baking powder, salt, and seasonings. Stir until well combined.
  4. Divide the dough into 2-3 portions. Roll each portion into a thin, oval shape on a floured surface and transfer to the prepared baking sheet.
