Country Apple Fritter Bread is a delectable blend of apples and spices, baked to perfection in a loaf pan, creating a moist and flavorful treat that is perfect for any occasion.

- Spray to grease the loaf pan
- 2 peeled and diced apples
- 2/3 cup (134 g) white sugar plus 2 tbsp to toss apples
- 1/2 cup (113 g) softened unsalted butter
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 1/2 cups (190 g) plain flour
- 1 3/4 tsp baking powder
- 1/2 cup (120 ml) milk or almond milk, plus a few tbsp to drizzle
- Salt to taste
- 1/3 cup (67 g) light brown sugar
- 2 tsp cinnamon
- 1/2 cup (60 g) icing sugar
Instructions
- Turn the oven on to 175°C (350°F). Spray your 23 x 13 cm loaf pan well.
- Mix the brown sugar with cinnamon in a small bowl. Toss apple pieces with 2 tbsp white sugar and set both aside.
- In a big bowl, beat the butter with sugar until it’s light and fluffy. Add eggs one by one, mixing well each time. Pour in the vanilla and stir.
- In another bowl, whisk together flour, baking powder, and a pinch of salt.
- Add the dry mix and milk to the butter mix little by little, starting and finishing with the dry mix. Stir just until everything’s combined.
- Put half the batter in the pan. Sprinkle half the cinnamon sugar on top then add half the apples. Repeat with the remaining batter, cinnamon sugar, and apples.
- Pop the pan in the oven and bake for 50 to 60 minutes.
Notes
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- This bread can be served warm or at room temperature.
- Store leftovers in an airtight container at room temperature for up to three days.
