Description

Country Apple Fritter Bread is a delectable blend of apples and spices, baked to perfection in a loaf pan, creating a moist and flavorful treat that is perfect for any occasion.


Ingredients

  • Spray to grease the loaf pan
  • 2 peeled and diced apples
  • 2/3 cup (134 g) white sugar plus 2 tbsp to toss apples
  • 1/2 cup (113 g) softened unsalted butter
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups (190 g) plain flour
  • 1 3/4 tsp baking powder
  • 1/2 cup (120 ml) milk or almond milk, plus a few tbsp to drizzle
  • Salt to taste
  • 1/3 cup (67 g) light brown sugar
  • 2 tsp cinnamon
  • 1/2 cup (60 g) icing sugar

Instructions

  1. Turn the oven on to 175°C (350°F). Spray your 23 x 13 cm loaf pan well.
  2. Mix the brown sugar with cinnamon in a small bowl. Toss apple pieces with 2 tbsp white sugar and set both aside.
  3. In a big bowl, beat the butter with sugar until it’s light and fluffy. Add eggs one by one, mixing well each time. Pour in the vanilla and stir.
  4. In another bowl, whisk together flour, baking powder, and a pinch of salt.
  5. Add the dry mix and milk to the butter mix little by little, starting and finishing with the dry mix. Stir just until everything’s combined.
  6. Put half the batter in the pan. Sprinkle half the cinnamon sugar on top then add half the apples. Repeat with the remaining batter, cinnamon sugar, and apples.
  7. Pop the pan in the oven and bake for 50 to 60 minutes.

Notes

  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • This bread can be served warm or at room temperature.
  • Store leftovers in an airtight container at room temperature for up to three days.
