Description
A delicious and creamy garlic butter sauce with Tuscan flavors, served over perfectly cooked salmon fillets.

- 4 salmon fillets, skinless
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 cup sun-dried tomatoes, chopped
- 3 cups baby spinach
- 1 teaspoon Italian seasoning
- 1 tablespoon chopped fresh parsley
Instructions
- Season the salmon fillets with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets and cook for 5 minutes on each side or until golden brown. Remove and set aside.
- In the same skillet, add butter and let it melt. Add minced garlic and sauté until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine.
- Add the Parmesan cheese, sun-dried tomatoes, and Italian seasoning. Stir until the cheese is melted and the sauce is smooth.
- Add the baby spinach and cook until wilted.
- Return the salmon fillets to the skillet, cooking for another 3-5 minutes until heated through.
- Garnish with fresh parsley before serving.
Notes
- For a lighter version, you can substitute half-and-half for heavy cream.
- Feel free to add other vegetables like bell peppers or zucchini for extra flavor.
- Serve with pasta or rice to soak up the delicious sauce.
