Description

A delicious and creamy garlic butter sauce with Tuscan flavors, served over perfectly cooked salmon fillets.


Ingredients

  • 4 salmon fillets, skinless
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 cup sun-dried tomatoes, chopped
  • 3 cups baby spinach
  • 1 teaspoon Italian seasoning
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets and cook for 5 minutes on each side or until golden brown. Remove and set aside.
  3. In the same skillet, add butter and let it melt. Add minced garlic and sauté until fragrant.
  4. Pour in the heavy cream and chicken broth, stirring to combine.
  5. Add the Parmesan cheese, sun-dried tomatoes, and Italian seasoning. Stir until the cheese is melted and the sauce is smooth.
  6. Add the baby spinach and cook until wilted.
  7. Return the salmon fillets to the skillet, cooking for another 3-5 minutes until heated through.
  8. Garnish with fresh parsley before serving.

Notes

  • For a lighter version, you can substitute half-and-half for heavy cream.
  • Feel free to add other vegetables like bell peppers or zucchini for extra flavor.
  • Serve with pasta or rice to soak up the delicious sauce.
